The Sovengard Biergarten & Kitchen: A Living Wall That Embodies Farm-to-Table Excellence

At The Sovengard Biergarten & Kitchen in Grand Rapids, Michigan, sustainability and aesthetics blend seamlessly through the use of LiveWall—a vertical garden system that enhances the beauty of the space and reinforces the restaurant’s commitment to fresh, locally sourced ingredients.

Visionaries Behind the Project

Lynne Parlberg, co-owner of The Sovengard alongside her husband Bill Parlberg and their son, Head Chef Rick Muschiana, share how LiveWall became a defining feature of their biergarten. It was Rick who initially discovered LiveWall when the restaurant needed a noise barrier at its original location. However, they quickly realized that LiveWall was more than just a functional necessity—it was a perfect representation of their farm-to-table philosophy.

The Move to a New Location

When The Sovengard relocated to 1232 Bridge St NW, the team knew they had to bring their LiveWall with them. Now standing at 4 feet high and spanning 60 feet in length, the wall continues to be a source of fresh herbs and vegetables used in the restaurant’s dishes and cocktails. The vibrant greenery also enhances the atmosphere of the biergarten, providing an inviting space for guests to relax and enjoy.

The Benefits of LiveWall

The Sovengard’s LiveWall is not just a visual delight but a fully functional part of the restaurant’s operation. The benefits include:

  • Farm-to-Table Freshness: By incorporating herbs and vegetables from the LiveWall into their seasonal menu, The Sovengard offers guests an unparalleled dining experience featuring the freshest ingredients possible.
  • Aesthetic Appeal: The wall is planted with a variety of flowers, herbs, and vegetables, creating a stunning natural installation that changes each year.
  • Ease of Maintenance: LiveWall’s automated watering system simplifies plant care, eliminating concerns about overwatering or underwatering.
  • Sustainability: By reducing the need for transported produce, the LiveWall contributes to a more sustainable food system.

A Testament to Innovation

Rick Muschiana, a graduate of Kendall College of Art and Design, envisioned The Sovengard as a space where nature, food, and artistry converge. His vision extends beyond the kitchen to the design of the restaurant itself, making LiveWall an integral component of the establishment’s identity.

The Sovengard’s Endorsement of LiveWall

"We couldn’t be happier with our LiveWall," says Lynne Parlberg. "From the way it looks to the ease of care and the incredible customer service we receive from the LiveWall team, we highly recommend it to anyone looking to enhance their space with a unique and functional green installation."

As spring approaches, The Sovengard team eagerly anticipates selecting new plants for their LiveWall, ensuring that each year brings a fresh and exciting transformation to their beloved biergarten.
